If you guys caught more fish you would get more experienced with the electric knife. For big fish I prefer the electric for the fillets and a "somewhat dull" fillet knife for the skin

A good 9" Dexter or the like is a much faster and more efficient tool for cleaning lots of fish. If you ever get a chance, check out a fish market where they process fish on the "hoof." Electric knives are rarely if ever used.
