With perch fishing just about gone for the past few years in the big lake I have fished for the lowely CARP. What do you do with them........
You will need a pressure cooker and some carp. Clean the fish and remove the spine bone. Cut athe fish in hunks about an cubic inch square. Pack into one pint mason jars and add 3 tbs.of ketchup, 3 tsp. of vinigar and 1/4 tsp of salt. Now this is very important. Process the covered jars for 90 minutes in a pressure cooker.( that's 240 degrees for 90 minutes). At this time and temperature the rib and "y" bones are soft and add to the flavor. The jars should be covered with water in the pressure coooker.
You will be hard pressed to tell these fish from canned Tuna. My wife made a Tuna salad with the canned carp and all could not tell the difference. Comments like : "boy that was sure good....Hey when ya bringin some more of that Tuna salad etc etc.on and on.

You must remember that carp from clean waters is prime fish all through Europe. I've read that in England a fisherman would trade the Queen for a Ten pound carp.
