Don't have too much experience with sharks but for other species we've done pretty well with 1/4 oz - 1/2 oz jigs (depending on current) and working them as you would any other jig using a minimum of 10lb test. We've done well on trout and redfish using just twister tails but got a larger variety using a whole shrimp( sheephead, rays, the occasional snapper and other "trash fish". The tackle shops should have the jigs (usually red) with large reversed barbs just below the head to help keep the shrimp on. Hope it helps, but the trout and redfish won't be close to shore in any numbers in July.
