I would use two light weight mesh bags filled with rocks ( rocks to be put in after the portage ) as the anchors. The braided nylon rope attached to the " anchors " would double as a food pack hanger to keep bears and other critters away.

The depth would be determined by lowering a heavy jig to feel the bottom structure.

I'm sure there are other methods that would work.......but those have worked for me.
