Default Snack Stix

Does anyone have a good recipe , or know where I can get one , for the salami type Snack Stix . I want to try to make my own in my Smoker . I have some equip. , just need a recipe . THANKS

I made some last year and used venison meat (1 day old roadkill). I remember doing a google search "smoked polish sausage recipe" and went with that. Actually I made them like regular homemade Polish Sausage and just smoked them. When your done after about 7hrs of low heat they'll shrink like the snack sticks you are talking about.

I made 10lbs and 5lbs on the ice went in one trip...no complaints! ....

Some recipes here. I can't vouch for them but I'm going to try the snack stick recipe myself. Last batch I used a kit from Cabela's. It said peperoni but didn't taste like any peperoni I ever tasted. It was more like a summer sausage taste.
